Chayote Squash are grown in Mexico, Honduras, and Guatemala, but have recently found their way into international markets in the US. You can eat this summer squash raw or cooked. It is often used in ways similar to a cucumber. Slice it and put on sandwiches, dice it and add to salads, shred it and put into slaw or salsa. Cousa Squash I really think the combination is perfect together in this healthy fall side dish. If you want to mix things up try dried apricots or raisins and feta cheese instead of goat cheese. SEASONING: I season the squash with ground nutmeg, cloves and cinnamon, as well as a little sea salt. These spices add a warm flavor to the squash. You can use pumpkin instead of butternut squash but I prefer it much more with butternut squash (it’s more moist and sweet, pumpkin is a bit drier and pumpkin puree is perfect for baking). Pattypan Squash are the small yellow or green squash with scalloped edges you often see used decoratively in table displays. They have a soft skin, so they can be eaten raw, but are more commonly roasted, grilled or used in stir fry. They’d be perfect to replace the zucchini in this Corn Succotash! Tromboncino Squash

Without further ado, here’s my all-time favorite butternut squash recipe. Hands-down. No question. Honey Roasted Butternut Squash with Cranberries and Feta While it seems like we went from Halloween to Christmas at the stores (including songs-ugh), in between, there is the best eating holiday of the year - Thanksgiving! Right? It is actually one of my favorites. Buttercup Squash are a round green squash about the shape and size of a small pumpkin. The peel is inedible, most winter squash have a peel that is at best unappetizing, but the interior can be used in pretty much any winter squash recipe (except of course those using the unique spaghetti squash). Butternut Squash Zephyr Squash is a rather unique summer squash looking like a yellow squash in the top half but green in the bottom half making a unique presentation. Use it like you would other yellow squash. Zucchini Carnival Squash are a small white pumpkin that have a rich orange flesh that is great for baking. So, by all means buy them to display on the porch, but as Autumn ends puree these little gems and get cooking. Charisma PumpkinsBlue Prince Pumpkins are a flat pumpkin in an intriguing shade of blue. They are typically from 7-9 pounds and can make a nice display, if you can find them. They are said to have a creamy interior less stringy than most pumpkins and sweet flavor making them yet another pumpkin that cooks well. Bonbon Squash Delicata Squash is an heirloom variety with a cream and green striped skin. Heirloom simply means it is an old variety not one of the thousands of recent fruit hybrids grown today. How old? Well, there isn’t a set answer. Some say an heirloom must be 100 years old, some longer. Sorry, just a little trivia. The delicata squash is a very tender oblong fruit. The name, no doubt, comes from its tenderness which also makes the skin perfectly edible. We are fans of eating the skins as it prevents waste, and they are generally loaded with fiber. These taste somewhat like sweet potatoes which is a major plus. Like sweet potatoes and other squash, they are great baked, roasted, and stuffed! Fortune Squash

How to reheat: This dish reheats very well! You could do that in a microwave or in an oven. Just pop all the ingredients into a baking sheet (this time the squash can be crowded) and warm up in an oven preheated to 350°F/180°C for about 5-10 minutes or until warm. I must admit that this dish really tastes best freshly roasted because the edges of the squash pieces are slightly crunchy, but it doesn’t make that much of a difference. In terms of flavor, this dish is really delicious reheated. Vegetarian – For a vegetarian stuffed acorn squash, replace the sausage with cooked quinoa and a variety of sauteed vegetables like bell peppers, sauteed zucchini, and sauteed mushrooms. Top with grated Parmesan cheese, or leave it off for a vegan option. This dish yields about 4 side dishes, depending on how much everyone grabs for their plate (at Thanksgiving everyone tends to take small scoops of each dish so it may even stretch from 4 to 6). Up until a few years ago, I always hosted Thanksgiving dinner. I really never minded making all the dishes since it was just our immediate family. Now our older daughter and her husband have taken over and I have to say, I love just showing up with a couple dishes. garlic - Look for firm heads of garlic without any soft spots or green shoots, which are an indication it's old and likely bitter.Roasted Butternut Squash with Cranberries is an easy and delicious side dish for the holidays or any weeknight meal. Butternut squash is roasted to create a sweet flavor along with warm fall spices and paired with dried cranberries, pecans and goat cheese and finished off with fresh herbs. This would be great alongside your turkey or ham! Garlic – You can use 2 teaspoons of jarred minced garlic for convenience, but I prefer to use fresh garlic cloves. Don’t overcrowd the squash – it will steam and be pale instead of having those beautiful golden brown caramelized edges (= that’s very all the flavor is!). This is actually a pumpkin variety not just the name for your artistic creation. These typically weigh in from 15-20 pounds and have a nice oval shape and orange color. Long Island Cheese Pumpkins ADD THE SPICES: Add the 2 tablespoons of olive oil, nutmeg, cloves, cinnamon and salt and toss the squash until coated.
