You may not have heard of Roel Westra, aka Pitmaster X, but he’s a big deal on the Dutch barbecue scene – his YouTube channel, featuring tutorials on deep-fried steak and homemade bacon, has nearly half a million subscribers.

You only need a cursory glance through his latest cookbook, Fire Food, to know this man is dedicated to his grill. There is, naturally, a bit of a Dutch lean to the book – bitterballen makes an appearance – and the occasional thing doesn’t translate (sorry Pitmaster, but we won’t be serving our burger on a bagel). From its creation to its use, and especially special recipes in which extra attention is paid to vegetables. The Thermapen is a godsend to backyard BBQers because it precisely measures temperatures, to the tenth of a degree, in as little as 3 seconds.

He is a certified BBQ judge and occasional competitive BBQ cook, which has afforded him opportunities to work alongside and learn directly from the best pitmasters, including world champions. I use these every time I have to move meat or pick up a grate, pizza stone, etc that’s still too hot to touch.
